In evolution, they just add to it as they go along, so the theory of evolution is more about adding to the theory and “evolving” the fiction of the theory itself rather than proving that animals actually do “evolve”. Most of what they show as examples of “evolution” are actually examples of “potential” more than “evolution”, we know that some animals with-in a species have the “potential” to grow very large or be very small, or have a few stripes instead of alot of stripes, or have slightly darker shade of fur or slightly lighter shade of fur etc. This is potential, these are not actually drastic freak mutations leading to evolutions into a new species-type that was as a result of circumstantial factors or because of some external pressure to survive; such claims based on said factors are just an “evolution of idea” and not actual evolution on an intrinsic level — its not proof, its proposition.
